Turkey Burrito Bowls
These Turkey Burrito Bowls are delicious, easy, and ready in less than 30 minutes! These bowls are perfect for a healthy meal prep!

    Ingredients
    For the Bowls
    • 1lb Ground Turkey(or beef, or chicken)
    • 3Tbs Water
    • 3/4Tsp Chili Powder
    • 1/2Tsp Garlic Powder
    • 1/2Tsp Onion Powder
    • 1/2Tsp Ground Cumin
    • 1/2Tsp Oregano
    • 1/4Tsp Paprika
    • 114.5-ounce Can of diced tomatoes, drained
    • 1Cup Rice(cook per instructions on package)
    • 115-ounce Can of Black Beans
    • 115-ounce Can of Roasted Corn
    For the Chipotle Sauce
    • 1/2 Cup Nonfat Greek Yogurt
    • 1/2Tsp Garlic Powder
    • 1Tbsp Lime Juice
    • 1Tsp Chipotle Pepper in Adobo Sauce
    • 1Tsp Sriracha
    • Salt and Pepper to taste
    Instructions
    1. Make your rice per package instructions. While the rice is cooking, prepare the meat.
    2. In a medium nonstick skillet, over medium heat, brown the meat. Drain. Add in 3 tablespoons of water, and the spices. Stir to make sure that all of the crumbled meat is coated in the spices. Add in the can of diced tomatoes and stir to combine. Turn the heat to low, and simmer for about 5 minutes, stirring occasionally.
    3. In a small bowl, add the Greek yogurt, 1/2 tsp garlic powder, 1 teaspoon of chipotle pepper in adobo sauce (I get this in the grocery store near the Mexican food – it’s already diced in the jar, if its not, just dice it up), 1 tsp of Sriracha (I add a little more because I love it), 1 tbsp of lime juice, salt, and pepper. Stir to combine, put the sauce into plastic containers if using for meal prep.
    4. Once the meat and rice are cooked, divide the meat, rice, beans, and corn into separate containers or bowls. Top with sauce if eating right away.
    Recipe Notes

    I get 5 bowls out of this recipe. And feel that there is enough in each bowl. However, if you want a more substantial bowl, go with four containers.

    I always use Jasmine Rice. I cook my rice in chicken stock for added flavor.
