These Turkey Burrito Bowls are delicious, easy, and ready in less than 30 minutes! These bowls are perfect for a healthy meal prep!
Are y’all ready for my favorite meal ever? I am soooooooo in love with these Burrito Bowls y’all – I would even go as far to say that these bowls are pure flavor perfection. I have literally made this recipe 4 weeks in a row for lunch meal prep, and I’ll probably make them next week too! We just can’t get enough of them.
These burrito bowls are great to make for lunch or dinner – we really love them for meal prep. I’ve talked about meal prep before, and how it makes life so easy. And I love love love easy. I make these on Sundays (in less than 30 minutes by the way!), and then we have 5 healthy lunches for the week. I wish my husband would just let me have all of them for my lunch during the week, but he loves them as much as I do.
The Turkey Burrito Bowl Breakdown.
Ground Turkey. I love ground turkey. I like how lean it is. But feel free to use whatever ground meat you would like. Ground chicken and ground beef are also delicious in this recipe. I add a can of diced tomatoes to the meat. You could add tomatoes with chilies for extra flavor!
Black Beans. Black beans have tons of health benefits! They are loaded with protein and fiber, and have vitamins and minerals to help support healthy bones. Black beans also have been associated with aiding in digestion. Not to mention, they are delish.
Corn. Corn is also a great source of fiber. It also has lots of minerals and vitamins that are great for the body. I like to use roasted corn in the can for this recipe.
The Chipotle Sauce. This chipotle sauce is made from Greek yogurt, a little chipotle in adobo, garlic powder, a little Sriracha, a squeeze of fresh lime juice (to brighten the flavors), salt and pepper. I put the sauce in these little containers for meal prep. This sauce really amps up the flavors of this recipe. And it’s healthy. You could use a light sour cream if you don’t have Greek yogurt.
How to make these turkey burrito bowls.
Start by making the rice. While the rice is cooking, work on the rest of the recipe, which is really just making the meat mixture. Brown the meat in a medium size skillet and then drain off the fat. Add in the spices, and three tablespoons of water to the pan. Stir to make sure that all of the meat is coated in the spices. Then stir in your can of tomatoes. Cut the heat down, and let it simmer on low for about 5 minutes.
Once your rice is ready, divvy it up between your containers. I use these containers. They are the perfect size, and I love that they are glass and not plastic.
Divide the meat, corn, and beans between the containers.
In a small bowl, add the Greek yogurt, garlic powder, the 1 teaspoon of chipotle pepper in adobo sauce (I get this in the grocery store near the Mexican food), a teaspoon of Sriracha (I add more because I love it), lime juice, salt, and pepper. Stir to combine, and then put the sauce into plastic sauce containers.
And that’s it. You definitely don’t have to make this recipe as a meal prep. You can certainly serve it for dinner or lunch as soon as you make it. But it sure does make an easy, quick, and HEALTHY meal prep.
