These are the cutest and yummiest cupcakes for St. Patrick’s Day! They have a slight green tint and green sprinkles! Oh, and delicious chocolate chips!
I can’t believe that it is almost St. Patrick’s Day! How are we already in March? Time is just flying by!
St. Patrick’s Day is on a Saturday this year! Do you have any plans for this fun and festive holiday? Well, if you’re planning to have a little get together, I have the perfect recipe for you! These cupcakes are delicious, moist, and festive! These St. Patrick’s Day Cupcakes are similar to my Chocolate Pistachio Bundt Cake, but these are made from scratch, have chocolate chips instead of chocolate syrup, and are frosted with a cream cheese frosting instead of being dusted with powered sugar.
Even though these cupcakes are made from scratch, it’s still a very easy recipe to follow. Most of the ingredients, you probably already have in the pantry and in the fridge.
How to Make these Cupcakes
Whisk together all of the dry ingredients and set aside. Beat the oil and sugar together until light and fluffy. Add the eggs one a time. Add in the vanilla and almond extracts. Then add in the 1/3 of the dry ingredients, and then half of the milk. Add another third of the dry ingredients, and then once that is combined, add the remaining amount of milk and combine, then add the last bit of the dry ingredients. Add in the chocolate chips, and cut the mixer on briefly so they get evenly distributed, or you could just fold them in. Put in the cupcake liners and bake for 18-20 minutes. Wait until they are completely cooled before frosting them.
You don’t have to use this cream cheese frosting recipe, you can just use a can of frosting from the store to keep it easy. But I love this cream cheese frosting recipe. It’s so easy, delicious, flavorful. This frosting also compliments these cupcakes nicely. If you don’t want to use cream cheese, you could just make or buy a vanilla-frosting.
I like to use mini chocolate chips in this recipe. It gives them a nice chocolatey flavor, but it’s not overpowering. You could however use regular sized chocolate chips, but you may just want to use a little less.
Similar to my Chocolate Pistachio Bundt Cake, these cupcakes have a box of instant pistachio pudding mix in them. It gives the cupcakes a nice nutty flavor and that nice green color. I also add a little almond extract to further extend the nutty flavor. I hope you try these cupcakes, I think you will love them. They are also sure to be a hit at your St. Patrick’s Day get together or celebration!
If you would for these cupcakes to be a little more green, add a little food coloring to the batter.
