Quiche is one of my favorite things ever. Not only is it super easy to make, it is delicious! A quiche is great for breakfast, brunch, lunch, and dinner.
The first time I ever made a quiche for my husband, he was very hesitant about it, and quite frankly a little bummed that I had made “breakfast food” for dinner. After a few bites, he told me that it was really good. And he now requests it frequently, for dinner, nonetheless. I don’t know about you, but after a busy day at work, the last thing I feel like doing is making a complicated dinner. So this is definitely one of my go-to’s during the week.
I don’t know what it is – but when you hear the word “quiche,” it seems like it would be difficult to make or that it’s fancy and time consuming to make, but I promise – it’s one of the easiest things you’ll ever make. And the left overs are just as wonderful. The great thing about this recipe – is that it is extremely flexible. As long as you have the basics (eggs, liquid, cheese, and a pie crust), it’s pretty much fail-proof. I’ve made so many substitutions to this recipe based on what I had on hand – and it’s always been delicious!
I typically use half and half as my liquid, but I have used milk (including skim) as well as buttermilk, and it still comes out delicious. I almost always use cheddar cheese, but I have used Gouda before and that was yummy! You can use whatever cheese you have on hand – I just wouldn’t use anything too pungent.
