These muffins are full of pumpkin flavor! They are super moist, have a delicious crumb topping and are drizzled with vanilla icing! These muffins are the perfect fall treat!
I know that pumpkin is all the craze as soon as fall starts. Pumpkin spice latte, pumpkin spice bread, pumpkin butter – it’s all about the pumpkin. Well, I just happen to love everything pumpkin spice. If you are in the same boat as me, or even if you haven’t jumped onto the pumpkin bandwagon, you really should try these muffins. Each bite is perfection – and the fact that these muffins have a CRUMB topping – OH MY GOODNESS. These muffins are perfect for a sweet treat, or even for breakfast – with a nice cup of coffee – YUM.
These muffins use oil instead of butter which equals super moist muffins. You don’t need an electric mixer for this recipe, just a couple of bowls and a whisk. You’ll whisk your dry ingredients together, whisk the wet ingredients together, combine them, and put in your muffin pan.
Let’s talk about this crumb topping. I can’t think of anything that makes a muffin better than a crumb topping. You’ll need to melt some butter, add some flour, sugar and pumpkin spice. Top your muffins with the crumbs and put them in the oven.
The vanilla icing is absolutely optional. But the icing takes the muffins to a whole other level. The icing is not super sweet – but it really ties all of the flavors together. I sift my powdered sugar so that my icing is not lumpy. It’s hard to get those lumps out sometimes, so this makes it easier. You don’t have to do that, but that’s what I do to ensure that my icing is smooth.
I know the ingredient list looks like a lot, but I’ll bet that you already have the majority of the ingredients in your pantry! You will also use a lot of those same ingredients in the crumb topping.
