This chicken salad is so light, flavorful, and easy to make. It has sweet grapes, yummy dill, chopped walnuts, and is lightened up with some lemon juice.
This is my absolute favorite lunch ever. The flavor of this chicken salad is just out of this world. The delicious grapes, nuts, red onion, celery, lemon juice, and dill make this recipe so unbelievably tasty.
I like to meal prep this chicken salad. I usually make this on a Sunday, and have lunch already made for the next few days. I usually get 4 to 5 servings of chicken salad from this recipe. It’s so nice not to have to worry about what to pack or what to put together for my lunch. I get so excited bringing this for lunch. I’m literally just watching the clock to see when it’s lunchtime. It’s just so tasty and light.
I use these containers for my meal prep. I like to make a healthy little meal out of this chicken salad by adding some butter lettuce, tomatoes, cucumbers, and crackers. You could also skip all of that and just put the chicken salad right on some bread, or a croissant. YUM. Or you could use the butter lettuce as a wrap for the chicken salad.
This recipe also serves as a nice appetizer. Serve with some crackers or baguette. Delish.
How to make this chicken salad
I use a rotisserie chicken. It makes things super easy and I like easy. I just use the chicken breasts from the rotisserie chicken, which typically equates to about two cups of shredded chicken. I use the remaining chicken for other recipes. You can certainly use leftover chicken though.
After shredding the chicken, finely dice the onions, celery, nuts, and fresh dill. Throw them into the bowl with the chicken. Halve the grapes and add those in as well. Add some salt and pepper, and then add the mayo, and lemon juice and then stir to combine. Super simple. The hardest part is dicing the veggies and nuts.
If you don’t want to use mayo – you can use Greek Yogurt. I’ve made this with half Greek yogurt and half mayo. The flavor is really nice when you use both. You get a nice little tang from the Greek Yogurt.
Or. You could use Avocado Oil Mayo. It’s delicious too. And PS – if you use that mayo – it then makes this recipe Whole30 approved – just skip the crackers.
If you don’t like grapes, use cranberries, or diced apples. You could also add some diced red bell pepper.
If you don’t like dill, use basil or whatever herb you would like to use. I personally LOOOOOOOVE dill. So I use it whenever I can. It’s just so good. You could also add a little Dijon mustard to this recipe.

I really love how the lemon juice really brightens the flavors in this recipe. The grapes also contribute such a sweet and deliciousness to the salad. I like the red grapes, but feel free to use green if that is what you like. The chopped walnuts also add such a depth of flavor to this chicken salad. They are an essential component to this salad!
