So, let’s talk pancakes. Pancakes are one of our go-to’s for breakfast on Saturday mornings. Fluffy pancakes with maple syrup, it’s just so good and so comforting after a long work week! After waking up and drinking my coffee on a Saturday morning, I frequently make these pancakes. These pancakes are seriously my favorite.
For as long as I can remember, I have always loved the flavor combination of lemon and poppy seeds. It’s just something about those two flavors together, it’s just out of this world. And when you put those flavors in a pancake. O.M.G.
Now, I know it’s super simple to just grab a pancake mix at the store. But making your own pancakes from scratch really is easy (promise). Most of the ingredients (flour, sugar, butter, baking soda, baking powder) are things that you probably already have in your pantry. It’s just a matter of combining those ingredients with a few extras.
I use Greek yogurt in these pancakes, which adds some extra nutrition to the most important meal of the day! I also use a little buttermilk in this recipe too, which helps to make the pancakes tender, fluffy, and it also gives the pancakes a subtle tang.
Seriously, after you’ve made homemade, from scratch, pancakes – you’ll really see how easy it is and wonder why you’ve been paying someone to mix these ingredients for you all these years when you can do it so easily at home!
These delicious pancakes are perfect for breakfast anytime, or when you want something special for breakfast, or even for dinner. I am such a fan of having breakfast for dinner!
I serve these pancakes with macerated strawberries, which just means I put a little bit of sugar on the cut up strawberries and leave them out at room temperature. The sugar helps to create a little bit of a strawberry “syrup.” I usually cut up the strawberries before I start assembling the pancakes, add a little sugar to the bowl, and toss them with a spoon. Once I make the pancakes, I top them with a fair amount of strawberries! YUM.
If you have strawberries, I HIGHLY recommend that you serve strawberries with these pancakes. The three of those flavors all together are beyond amazing. You will love it.
