This rigatoni dish is so easy, and so delicious. It takes minutes to throw together, and is perfect for a busy weeknight!
On a busy weeknight, the last thing I feel like doing is cooking a meal that takes a whole lot of effort! But… I do not want to sacrifice taste for time. So this recipe, my friend, is a win-win. It takes very little time to put together, but you would never know that based on how it tastes!
I like to use ground turkey with this recipe, but you can use whatever you would like. Ground beef and Italian sausage are also great to use. However, if you do use Italian sausage, either eliminate or cut down on the Italian seasoning.
This recipe calls for two small jars of marinara sauce. If you have a marinara recipe that you like to make and have the time to make it, by all means, do so. It would only enhance the flavor of this dish. There are some great marinara sauces out there – so I just grab two that I really like and use those.
This recipe starts out with the basics, onions and garlic. I sauté one large, finely diced, onion in some olive oil. Once the diced onions are translucent, add the garlic, and let sauté for one minute. Then add in your meat. Cook the meat, and then drain the fat. Add your marinara sauce, and spices. Let the sauce simmer while your pasta cooks. Once your pasta is done – put a thin layer of sauce on the bottom of your 9×13 dish (just enough to cover the bottom). Then put half of your pasta on top of that thin layer of sauce. Spread out your mozzarella cheese over the pasta, then put half of your sauce on top of the cheese. Repeat this process – one more layer of noodles, cheese, and sauce. Add the parmesan cheese to the top – and then bake. Bake for 20-25 minutes until it’s nice and bubbly.
This can be made ahead of time. Just cover once you have assembled it, and put in the fridge. When ready to bake, just pop it in the oven. It may need a few more minutes in the oven. Just monitor it. You can also freeze this! Just thaw in the fridge for 24 hours, or bake straight from the freezer. Cook time will be 90 minutes to 2 hours.
Garnish with parsley if you would like – and you have one easy and delicious dinner.
