This recipe is so easy, delicious, and healthy! It’s very versatile and takes only ONE minute to prep!
I like to meal prep on most Sundays – as I don’t want to cook every night of the week. And this recipe is definitely one of my favorite things to prep – as it takes NO time to throw together and it’s sooooo good! All you need are chicken breasts, a jar of salsa, a lime, chili powder, and cumin. I put the salsa in a small bowl, then add lime juice, chili powder and cumin – and mix together. Pour over your chicken in the crockpot and forget it for three hours.
Salsa is very low in calories – and also gives your chicken such a great flavor while it’s cooking in the crockpot. You can certainly just use salsa for this dish and leave out the spices and lime juice – however, I feel that they really take this chicken to another level when added. So if you have some chili powder, cumin, and a lime – use them! The lime juice also really brightens this dish up.
You can use this salsa chicken in so many different ways. My husband and I like them in tacos, quesadillas, on top of a salad, over some rice, or even just by itself. It makes for a healthy lunch or dinner!
Top with some cheese, black beans, or avocado. Yum!
