This tasty soup is put together in a matter of minutes, but tastes as if you had been cooking it on the stove all day. This soup is full of veggies and tender chicken!
After all of the delicious (and sometimes, time-consuming) cooking over the holidays, it’s time for a meal that is easy but still so very good! This is one of those meals that you can just throw the ingredients into the crockpot and forget about it for a few hours! These are my favorite kinds of recipes.
The hardest part about this recipe, is chopping the onion and garlic (seriously). Which means.. this recipe is pretty easy!
You’ll need around a pound of chicken breasts. I typically use about a pound and a half – which equates to about 3 chicken breasts. I trim the fat off of them, and then place them in the bottom of the crockpot. Then you literally, just throw everything else in! This soup is full of delicious veggies, chicken, and topped with so many delicious toppings!
Let the soup cook on high for about 3 to 4 hours, or on low for about 5 to 6 hours. So this means that you can go run your errands or get some things done around the house while dinner is cooking! Once it’s done – pull the chicken breasts out, and shred them with two forks. Then put the chicken back into the crockpot and stir to combine.
Ladle the soup into bowls, and then add your favorite toppings. The toppings are seriously where it’s at. First thing I do, is squeeze a little lime juice on top of my soup. It really brightens up the soup and gives it a fresh flavor. Then of course, you have to have tortilla strips! These are my absolute favorite. I break them up and add them to the top of my soup. And you’ll probably need some more after you’ve eaten those – so take them to the table! I also add cheese and a little bit of sour cream. Avocado is also super delicious with this soup! Garnish with some cilantro and you are set!
