This creamy pesto pasta is one of the tastiest pasta dishes that I’ve ever had, hands down! And one of the best parts of this dish is that it only takes minutes to throw together!
As I have expressed before, I have a deep love for pesto. So what’s better than when you combine delicious pesto with cream and pasta? I can’t think of too many things better than that! This recipe is literally my favorite pasta dish ever.
My sister-in-law introduced me to this recipe a few years ago, and I was blown away by the flavors of this dish. Whenever I have enough basil to make pesto, I always make this dish. If you’re in pinch, you could definitely use some jarred pesto. There are some good jarred pestos out there, but nothing compares to freshly made pesto. If you’re making fresh pesto, here is my recipe.
Now, I am by no means a chef – and I know that you are not technically supposed to “cook” pesto as it can mess with the fresh basil flavor. However, this recipe is so delicious (and easy) that I do not find that it changes the basil flavor. You will want to move rather quickly when you make this, as this recipe comes to together pretty quickly. So by moving so quickly, it’s really not over the heat that long – just a few minutes.
First, you’ll want to boil your pasta of choice. I always use bowtie pasta for this recipe as I find that it really helps to soak up the pesto sauce in all of the nooks and crannies of the pasta. Once you have boiled your pasta per box directions, measure out some pasta water, set aside, then drain the pasta and set aside.
In a large stockpot or dutch oven over medium heat, you’ll want to add 2 tablespoons of olive oil. Let that heat up and then add a cup of pesto. If you make my recipe for pesto, it makes about 1 and ¼ cups of pesto. I personally can’t get enough pesto, so I add the 1 and ¼ cups to this dish. That’s why my noodles are super green! Stir the pesto with a whisk and once it becomes bubbly, stream in the cream. Once combined, add in your pasta. If needed, add some pasta water if you need to thin out your sauce a little. Check for salt, and add some pepper if you wish. And YOU are DONE. Super simple, super delicious. You can also add some chicken or shrimp to this dish.
