Calling all PEANUT BUTTER lovers out there… THIS COOKIE IS FOR YOU. Even if you aren’t a crazed peanut butter lover, like myself, you still need to make these cookies! These cookies are moist, chewy, and perfect.
I had some family over for dinner the other night and I made these cookies for dessert. As soon as I pulled them out of the oven, they were almost immediately gone. You cannot just stop at one. These cookies always receive rave reviews. They are simply perfect with a cold glass of milk. YUM.
Peanut butter cookies are perfect for the holidays or anytime when you just need a sweet treat. These cookies are “soft bake” cookies, which are always my favorite. The melt in your mouth goodness – it just doesn’t get any better than that! And they stay soft for days (if they last that long!).
This is a classic peanut butter cookie recipe. And the best part about this recipe, besides the amazing peanut butter flavor, is the ease of it. You only need two bowls and a mixer – one bowl for your wet ingredients, and one for your dry. I always use smooth peanut butter, but you can certainly use chunky if that is what you prefer.
One of the most important things about this recipe is that the dough has to be chilled. If the dough is not chilled, the cookies will simply spread too much. The recipe has room temperature butter, eggs, and peanut butter in it – so if you don’t chill the dough, you will loose your pretty crisscross pattern on top and all of your cookies will probably run into each other making one large cookie! We don’t want that! I recommend chilling the dough for at least 3 hours. I usually chill mine for 8-9 hours. You want your cookies to be firm going into the oven. So if you’re working with your dough and its very pliable, stick the dough back in the fridge before putting them in the oven.
