Cilantro Lime Rice
This cilantro lime rice is simply one of the best side dishes ever! Seriously! It’s super easy to make, delicious, and it’s perfect for Burrito Bowls or any Mexican-Inspired dish!
    • 2Tbsp Unsalted Butter
    • 1 to 2Cloves of Garlic, Minced
    • 1Cup Jasmine Rice
    • 1 and 1/2Cups Chicken Stock (low sodium), or Water(Use the amount of liquid that your rice package recommends)
    • Zest Of One Lime
    • 2Tbsp Lime Juice (typically 1 juicy lime)
    • 3Tbsp Chopped Cilantro
    • Salt and Pepper to taste
    1. Over medium heat, melt the butter in a saucepan.
    2. Once melted, add in the minced garlic. Sauté the garlic for about 30 seconds.
    3. Add in the rice and stir. Let the rice get nice and toasty. About one to two minutes while stirring.
    4. Next, add in the liquid, salt and pepper, bring to a boil, and cook according to package directions – typically 15 to 20 minutes on low, and covered.
    5. Once cooked, remove from heat, add the chopped cilantro, zest, and lime juice to the rice and toss to combine. Serve.
    Recipe Notes

    Jasmine rice recommends 1 and 1/2 cups of liquid to 1 cup of rice. Use however much liquid the package of rice recommends per your rice amount.
