This cilantro lime rice is simply one of the best side dishes ever! Seriously! It’s super easy to make, delicious, and it’s perfect for Burrito Bowls or any Mexican-Inspired dish!
Oh, how we love Mexican food. This rice recipe is one of our favorite side dishes. I make this rice all the time. It’s very easy to make, delicious, and is the perfect side dish to accompany any meal. This rice is my favorite in Burrito Bowls (recipe coming in a few days!). It’s also great in Chicken Fajita Bowls, Sriracha Meatballs, Chili Lime Chicken, and of course, tacos.
It’s funny, because for years, I could not stand cilantro. Seriously. I pretty much hated it. Any recipe that called for cilantro, I would use flat-leaf parsley instead. Then, I really don’t know what happened, I guess your taste buds really do change over time (so they say) – because I LOVE cilantro now and use it frequently. If I have cilantro on hand, you better believe that I’m making this rice.
This rice is also customizable. You could add some black beans, jalapenos, or onions to this rice recipe for some added protein and flavor. If you decide to add some of these in, I would add them in right before you add the liquid and then bring your mixture to a boil.
How to make this cilantro lime rice
Melt the butter in a saucepan.
Once melted, add in the minced garlic. Let that sauté for about 30 seconds.
Add in the rice and stir. Let the rice get nice and toasty. About one to two minutes while stirring.
Next, add in the liquid, bring to a boil, and cook according to package directions – typically 15 to 20 minutes on low, and covered. Once cooked, remove from heat, add the zest and lime juice to the rice and toss to combine.
Some tips for making this rice
Rinse your cilantro before chopping. Cilantro has sand-like particles on it, so just rinse under cold water before chopping.
I ALWAYS use Jasmine Rice. For years and years, I had so many issues cooking rice. Sometimes, I would get it right and the texture would be perfect, and other times, the rice would be hard, and it was impossible to fix it. I never have this issue when I use Jasmine Rice. I really can’t recommend it enough.
Use chicken stock instead of water. This isn’t mandatory, but I find that it makes such a big difference in the flavor of the rice. If you don’t have any though, water is fine.
Don’t forget the zest of the lime. So much flavor is in the zest. If you don’t have a citrus zester, I would highly recommend investing in one. This is the one that I use.
