These cookies are absolutely perfect for the holidays or just for a sweet treat! They are soft, full of flavor, and easy to make!
I cannot believe that Christmas is almost here! I feel like this year has really flown by. Are you in a panic trying to get all of your Christmas shopping done? I always, always say that I am going to start my Christmas shopping early – and I never do. This is about when panic starts to set in for me. I did some Christmas shopping yesterday, and the traffic just getting to the shopping center was hectic. Along with the crowded stores – it’s definitely enough to stress you out.
Well I have something to help if you are starting to get stressed with all of the Christmas to-dos – three words for you, friend – CHOCOLATE CRINKLE COOKIES.
These cookies are basically chocolate perfection. I add chocolate chips into my dough, so when you take a bite out of one of the cookies, it has little pockets of molten chocolate. Yes, I said molten chocolate. It really doesn’t get any better than that. Now, you don’t have to add the chocolate chips to the dough as they are chocolately enough on their own, however the added chocolate chips really takes this cookie to the next chocolate level. And as I have said before, I am a chocolate lover. So this happens to be one of my most favorite cookies.
These cookies are soft cookies. They are almost like little brownie bites. If you need another cookie recipe for a cookie exchange, or to make for family and friends, or even for SANTA, this is the cookie for you.
One caveat to making these cookies: you have to CHILL the dough. Because we are not using butter in this recipe (I know! Shocker!) and using oil, the dough absolutely has to be chilled. I recommend the dough to be chilled for at least 3 hours in the refrigerator or up to 24 hours. I typically make the dough the night before I need the cookies. Once your dough has chilled, form about 1.5 inch balls. Then roll the balls into powdered sugar, coating completely. I gently press down to flatten the ball a little while I’m rolling the dough in the powdered sugar – not much, just a little. Otherwise, you will have more of a puffy cookie – which is absolutely fine, too!
These cookies and a cold glass of milk = pure delight.
