These chocolate chip cookie whoopie pies are one of the dreamiest desserts that I’ve ever had! Soft, chewy, cookies with a delicious marshmallowy-vanilla cream filling!
I can’t think of too many desserts that are tastier than a whoopie pie! They are so reminiscent of childhood. They really take me back to being a kid, which is nice, because adulting is just not fun sometimes. amiright? Well, today, I’ve got a nice little spin on the traditional whoopie pie – a chocolate chip cookie whoopie pie! I don’t think it gets much better than this, people.
I don’t know if you have tried my Chocolate Chip Cookies recipe, but they are my all time favorite chocolate chip cookies! I definitely recommend them! They are soft, chewy, and loaded with chocolate chips. These chocolate chip cookies + milk = perfection. They are always such a huge hit every time that I make them. My husband always requests them. I usually make the recipe, and freeze half of the dough for a later date. There’s nothing better than freshly made cookies – well, with the exception of freshly made cookies with a dreamy marshmallowy filling inside! So now let’s talk about the components of these yummy whoopie pies.
Again, these cookies are so soft and chewy, which make them the perfect base for whoopie pies. If you have a crunchy or hard cookie, it just won’t work for whoopie pies – all of the filling will just fall out of the other side. Having a soft cookie is key.
How do you make these chocolate chip cookie whoopie pies?
Well. We are going to start out by making a batch of my Best Chocolate Chip Cookie recipe. This recipe makes about 24-30 cookies depending on size – I usually always get about 24. So you’ll get about 12 whoopie pies with this recipe.
Once your cookies have completely cooled, make your filling for the pies.
Beat the softened butter (make sure to have let the butter sit out at room temperature for a bit), powdered sugar, marshmallow fluff, and vanilla extract until smooth. Then spread about a tablespoon (or a little less) on a cookie and then top with a similar sized cookie.
Done. So easy.
This marshmallowy-vanilla filling will blow your mind. It’s not too sweet, but has the most delicious flavor that compliments these chocolate chip cookies so wonderfully. It’s light, fluffy, and creamy.
