Chili Lime Chicken Tacos with Pineapple Salsa
  • 1Recipe Chili Lime Chicken
  • Flour or Corn Tortillas
Pineapple Salsa
  • I Cup Pineapple,Diced (Canned or Fresh)
  • 1 Red Bell Pepper,Diced
  • 1 Shallot or Red Onion (1/2 of a red onion),Diced
  • 1/2 to a Whole Jalapeno,Ribs and Seeds removed, Diced (if you like it hot, use it all)
  • 2Tbsp Cilantro,Chopped
  • 1/4Tsp Ground Cumin
  • Juice of a Lime
  • Salt and Pepper to taste
Avocado Crema
  • 1 Avocado,Peeled and Pitted
  • 1/2Cup Greek Yogurt or Sour Cream
  • 1 Tbsp Mayonaise
  • 1/4Tsp Garlic Powder
  • 1/4 Tsp Salt
  • 1Tbsp Cilantro,Chopped
  • Juice of a Lime
  1. Prepare your Chili Lime Chicken (recipe below and above) first.
  2. Prepare your salsa by putting all prepared ingredients into a bowl and mix.
  3. For the crema, add all ingredients into a food processor and pulse until smooth.
  4. Assemble tacos. Chicken, salsa, and crema. If you would like cheese on your tacos (which I always do!), I either put some in the tortilla and pop in the microwave for 15-20 seconds, or you can do this on stovetop. Top with chicken, salsa, and then crema. ENJOY!

Crema can be made 2-3 hours in advance.  Store in fridge in air tight container.
