Chicken Pot Pie… the ultimate comfort food.
What is it about the fall? The air is crisp, the humidity is gone. It’s such a feel-good time. The fall is definitely my favorite time of the year. And when it starts to get a little cooler outside, I start craving comfort food. Chicken Pot Pie is one of those comfort foods. A good pot pie just makes you feel all warm and fuzzy inside. The melt in your mouth goodness – I could easily eat the whole dish – but I try to practice some self-control! And believe me when I say, the leftovers are even better the next day!
What’s great about Pot Pie – is that you can use chicken that you have on hand, leftover chicken, chicken that you just made, or even use your leftover turkey from Thanksgiving.
I add a little wine to my Chicken Pot Pie – it really takes the flavor to another level. It gives it such depth of flavor. However, if you don’t like wine or just don’t want to add it, feel free to leave it out. Just remember – if you do use the wine, make sure it is a wine that you would drink.
I also add garlic to my pot pie because, well, garlic makes everything better. Also – for the peas – I am not a fan of frozen peas, so I don’t use them. I used canned peas instead. If you use canned peas, add them into the mixture before putting the mixture in to your pie dish – and try to be delicate when you’re stirring them in.
