Chicken noodle soup is one of my favorite things to make, especially during the colder months. It’s definitely a classic.
I would love to give y’all a sweet and sentimental story about how my grandmother made chicken noodle soup, and her making this soup is one of my fondest childhood memories – but … it just didn’t happen. Sorry to disappoint! But the chicken noodle soup that I had growing up was from the can. Not saying that there aren’t some great canned soups out there – but that’s just what I had growing up. But let me tell you, this recipe is super easy and definitely worth the effort to make!
During the fall and winter months, this recipe is on regular rotation in my household. My husband even requests it! And he is definitely a meat and potatoes type of a guy. I’ve heard many times, “soup does not fill me up, I need something else too.” However, this soup fills him up and he loves it.
This soup comes together pretty quickly, especially if you use a rotisserie chicken like I do. You can certainly use leftover chicken or make chicken for this dish. I just find it super easy to pick up a rotisserie chicken at the store and shred it. You can also use your own stock for this – it would give it a nice flavor. However, I find that I never have the time to make my own stock, and there are plenty of great stocks out there. I always buy the low sodium or reduced sodium stocks because I like to control my salt content.
There are a few types of herbs in this recipe so if there is something you don’t like, or don’t have – just don’t add it in. It will make it taste a little different, but it will still be delicious. One thing definitely not to skip though, is the flat leaf parsley – it really brings the soup together.
So let’s talk noodles – egg noodles are definitely the way to go in my opinion! It is quintessential chicken noodle soup. But, again, if you don’t like egg noodles, or don’t have any – just use what you have.
This soup comes together in about 30 to 40 minutes. Chopping the veggies is the most difficult part. This is definitely my type of (quick) dinner!
