These chicken fajita bowls are easy, delicious, and healthy. Skip the tortilla and add some cilantro-lime rice. This fajita bowl is all you need for a healthy and delicious meal.
My husband and I love to eat Mexican food. So we go to Mexican restaurants a good bit. We almost always split the chicken fajitas. We love the charred bell peppers and onions, and that flavorful chicken. Well, let me tell you friend, these fajita bowls are just as good, if not better than the chicken fajitas you order at a Mexican restaurant (and healthier).
You’ll want to slice your chicken breasts into small strips. Then put your marinade together. Throw the marinade into a ziploc bag with the chicken, and make sure you really work the marinade into the chicken and that each piece is covered in marinade. The chicken marinade for this recipe is delicious. It has a nice flavor that is not too spicy or too overwhelming. It pairs nicely with the vegetables. I typically use 1 red bell pepper, 1 green bell pepper, and 1 decent sized yellow onion for the veggies. You can use whatever peppers you like though. I try to let my chicken marinate for at least an hour in the fridge before cooking. Let the marinade stay on for at least 15 minutes before cooking – up to three hours.
When you’re ready to make the fajitas, pull the chicken out of the fridge and let it come to room temperature (takes about 15-30 minutes). I usually chop my veggies during this time, and get my rice started. I always use Jasmine rice. It has never steered me wrong, and it always comes out perfectly. Use whatever rice you would like though. This recipe makes a decent amount of chicken and veggies, so I make 2 cups of rice and divvy it up between about 6 to 8 bowls. I typically make my rice with chicken stock as my liquid because it gives it a little more flavor. Once your rice is finished cooking (while it’s still hot) – you’ll want to add your lime zest and juice, as well as chopped cilantro.
Add your favorite toppings! Some of our favorite toppings are black beans, sour cream, guacamole, and a little bit more lime juice! We love this recipe because it makes approximately 6-8 bowls. So we have left overs for days. Once it’s all ready, I go ahead and make all of the bowls and put them in the fridge. You can just grab one and go! Perfect for lunch or dinner.
