This broccoli cheddar soup is so creamy and delicious! It’s ready in about an hour and is perfect for lunch or dinner.
I love soup. And I love Panera Bread’s broccoli and cheddar soup. I order it each time I go there. Well this recipe is just as good as Panera’s, if not better! This soup is the perfect comfort food! It’s creamy and full of veggies – fresh broccoli, carrots, and onion!
For the carrots – you can slice your carrots into rounds, use matchstick carrots, or shred your carrots with a box grater. I usually shred mine with a grater.
This recipe is SUPER easy. All you need is one large stockpot or dutch oven for this recipe. If you’re a vegetarian, you can use vegetable stock instead of chicken stock. Also, if you would like to make this a little healthier, you can use fat-free half-and-half. I’ve used fat-free half-and-half before, and it is just as delicious and creamy!
Now I love a creamy soup, but I don’t like my soup super thick, so I often add a little more chicken stock to my soup. This recipe calls for two cups of chicken stock, but I typically use three cups so that my soup is just a little thinner. You can do whatever you would like.
I also add a few different spices to this soup – if you don’t have them, you don’t have to use them. But it really gives the soup a depth of flavor. Also, make sure that you use a good quality cheese. I always buy a block of cheese and grate my own. The cheese tends to incorporate into the soup better if it is freshly grated. If you like a smoother soup, you can blend the soup by putting it in a blender, or using an immersion blender. I like the chunks of broccoli though!
