Make sure the wings are dry. Pat them dry with a paper towel if needed. In a large bowl, toss the wings with the vegetable or canola oil. Sprinkle the lemon pepper seasoning over the chicken. You can choose to do this in the bowl and toss, or sprinkle the seasoning over the chicken while it’s on the cookie sheet. Place the chicken on the prepped wire rack on the cookie sheet (making sure not to crowd them) then put them in the oven.
